There is nothing I love more than simple, easy to make recipes. Especially in the morning. This chia seed pudding recipe is the best breakfast to eat when you’re feeling lazy. (the pic isn’t pretty but I swear it’s good!) You can even make it the night before.
For the chia seed pudding you’ll need:
1 tbsp nut butter of your choice
berries of your choice
Mix the chia seeds with 3 tbsp of water. Set in the fridge for 15 minutes. When in water, chia seeds expand and turn into a pudding texture (Due to the texture, many vegans use this mixture as an egg substitute). You can let it sit overnight, but even 15 minutes is enough.
Take out of the fridge and mix with one mashed banana, the nut butter and berries. Peanut butter and raspberries is a combo I’ve been loving lately.
That’s literally it. The outcome is a refreshing and healthy pudding. The pudding is vegan friendly, gluten free and so good. ;P
