Simple Two Ingredient Banana Pancakes

The recipe I’m going to share has been floating around the internet for years, with many different variations, so I’m not sure who gets the credit. The reason it’s so popular is because it is SO simple to make. They are flour free, gluten free, processed sugar free. Need I say more? You only need TWO ingredients for these healthy banana pancakes. Yes, two.

1 Banana + 1 Egg = Yummy Banana Pancakes

You may be scratching your head at the above equation, but trust me. These are good. If you’re feeling lazy or don’t have enough ingredients for fancy pancakes, all you need is bananas and eggs. It’s that simple.

Extras: I like to jazz mine up with peanut butter or cinnamon. You can add in anything you’d like (oatmeal, chia seeds, peanut butter, vanilla extract – the world is your oyster). Even with these additions, they are still super simple and easy to make. And they don’t taste like eggs! At all. They’re sweet and bananaish. If you’re scared of tasting eggs, just use the add in ingredients. (Peanut butter is my fav).

The Recipe

 

Ingredients:

  • 1 banana
  • 1 egg

Optional:

  • Peanut butter
  • Cinnamon
  • Chia Seeds
  • Blueberries
  • Oatmeal
  • Vanilla Extract

 

  1. Mash up one ripe banana with a fork. Add in one egg and mash all together to form a smooth consistency
  2. Add in any extras at this point. Mix together.
  3. Heat a pan over medium heat. Spray or cover with oil.
  4. Plop spoonfuls of the batter on heated pan.
  5. Flip after bottoms are cooked (30 seconds or so).
  6. Eat, Repeat, Eat Repeat.

I love simplicity and food. The recipe above makes about 6-7 silver dollar banana pancakes. Just double the recipe if you’re in need of more deliciousness. (Hint: I’ve also saved batter covered in the fridge and it was perfectly fine to use the next day). I definitely recommend using organic ingredients.
